Caramelized onions

  • 30 g Neutral Oil or Lard
  • 2 Onions, sliced
  • 1 t White Sugar (optional)
  • 1/2 t Medium-Grain Salt
  • 1/4 t Black Peppercorn, ground
  • 30 g Wine or Water
  1. Caramelize onion. Heat oil over medium heat. Stir in onions, sugar, salt, pepper to coat evenly. Cook about 40 minutes, stirring occasionally, until caramelized.
  2. Deglaze and reduce. Add wine or water to deglaze pan. Reduce while scraping up fond. Remove from heat.
