Caramelized onions
- 30 g Neutral Oil or Lard
- 2 Onions, sliced
- 1 t White Sugar (optional)
- 1/2 t Medium-Grain Salt
- 1/4 t Black Peppercorn, ground
- 30 g Wine or Water
- Caramelize onion. Heat oil over medium heat. Stir in onions, sugar, salt, pepper to coat evenly. Cook about 40 minutes, stirring occasionally, until caramelized.
- Deglaze and reduce. Add wine or water to deglaze pan. Reduce while scraping up fond. Remove from heat.
