String bean salad

  • 300 g String Beans, trimmed
  • 1 Shallot, minced
  • Vinaigrette
    • 2 T Dijon Mustard
    • 2 T White Wine Vinegar
    • 6 T Olive Oil
    • Medium-Grain Salt
    • Black Peppercorn, ground
  1. Make vinaigrette. Combine dressing ingredients in a sealable jar. Shake vigorously to emulsify.
  2. Blanch string beans. Drain and dry.
  3. Combine salad. Thoroughly mix string beans, shallots, and vinaigrette.
  4. Rest at least 30 minutes and up to 2 hours before serving.
