String bean salad
- 300 g String Beans, trimmed
- 1 Shallot, minced
- Vinaigrette
- 2 T Dijon Mustard
- 2 T White Wine Vinegar
- 6 T Olive Oil
- Medium-Grain Salt
- Black Peppercorn, ground
- Make vinaigrette. Combine dressing ingredients in a sealable jar. Shake vigorously to emulsify.
- Blanch string beans. Drain and dry.
- Combine salad. Thoroughly mix string beans, shallots, and vinaigrette.
- Rest at least 30 minutes and up to 2 hours before serving.
