Szechuan cold noodles

  • 100 g Dry Alkaline Noodles, undercooked, cold
  • 80 g Cucumber, peeled, shredded
  • Seasonings
    • 1 T Soy Sauce
    • 1 T Szechuan Sauce
    • 10 g White Sugar
    • 10 g Vinegar
    • 5 g Sesame Oil
    • 5 g Tahini Paste
    • 2 Garlic Cloves, minced
    • 1/4 t Medium-Grain Salt
  • Garnish
    • Scallions, chopped
    • Peanuts, smashed, toasted

Substitute bean sprouts for cucumber.

Substitute these sauces for seasonings
  1. Mix Seasonings in a small bowl.
  2. Combine & serve. Add noodles and cucumber to bowl. Serve with mixed seasonings.
