Soy noodles
- Sauce
- 2 T Soy Sauce
- 1 T Oyster Sauce or Hoisin Sauce
- 1 T Mirin or Shaoxing Wine
- 2 t Toasted Sesame Oil
- 1/4 t MSG (optional)
- 200 g Dry Alkaline Noodles, cooked and drained
- 200 g Tofu, cubed
- 2 T Neutral Oil
- 200 g Scallions, roughly chopped
- 2 Garlic Cloves, minced
- Mix sauce and set aside.
- Cook tofu. Heat oil in skillet over medium-high heat. Add tofu and scallions, and cook 5 minutes until scallions are slightly blistered. Add garlic, and cook an additional 30 seconds until fragrant.
- Season noodles. Mix in noodles and sauce, and cook 3-5 minutes until slightly browned.
After draining noodles, rinse under cold tap water so they don't clump into an unworkable block as they cool, and shake off excess water before using.
