Chickpea pan

  • 2 T Olive Oil
  • 200 g Chickpeas, cooked
  • 200 g Corn Kernels
  • 200 g Frozen Green Peas, thawed
  • 2 Scallions, thinly sliced
  • Seasonings
    • 1 t Paprika
    • 1/2 t Medium-Grain Salt
    • 1/2 t Black Peppercorn, ground
  • For Serving
    • Fresh Mint Leaves, minced
    • Fresh Parsley Leaves, minced
    • Lemon Juice
  1. Cook. Heat olive oil in frying pan over medium heat. Stir in chickpeas, corn, peas, onion, and seasonings, and cook 10 minutes.
  2. Serve with fresh herbs and lemon juice.
