Chickpea pan
- 2 T Olive Oil
- 200 g Chickpeas, cooked
- 200 g Corn Kernels
- 200 g Frozen Green Peas, thawed
- 2 Scallions, thinly sliced
- Seasonings
- 1 t Paprika
- 1/2 t Medium-Grain Salt
- 1/2 t Black Peppercorn, ground
- For Serving
- Fresh Mint Leaves, minced
- Fresh Parsley Leaves, minced
- Lemon Juice
- Cook. Heat olive oil in frying pan over medium heat. Stir in chickpeas, corn, peas, onion, and seasonings, and cook 10 minutes.
- Serve with fresh herbs and lemon juice.
