Sweet potato tacos
- 220 g Refried Beans
- 110 g Mozzarella, shredded (optional)
- 900 g Roasted Sweet Potatoes
- 8 Small Tortillas (about 15 cm or 6")
- 1 T Lime Juice
- 4 sprigs Coriander Leaves, chopped
- Preheat oven to 425ºF (220ºC).
- Prepare refried beans. Add beans and mozzarella to saucepan. Cover. Warm over low heat.
- Prepare tacos. Spread refried beans on tortillas. Add ~80 g of roasted vegetables to each tortilla.
- Garnish with lime juice and cilantro.
