Sweet potato tacos

  • 220 g Refried Beans
  • 110 g Mozzarella, shredded (optional)
  • 900 g Roasted Sweet Potatoes
  • 8 Small Tortillas (about 15 cm or 6")
  • 1 T Lime Juice
  • 4 sprigs Coriander Leaves, chopped
  1. Preheat oven to 425ºF (220ºC).
  2. Prepare refried beans. Add beans and mozzarella to saucepan. Cover. Warm over low heat.
  3. Prepare tacos. Spread refried beans on tortillas. Add ~80 g of roasted vegetables to each tortilla.
  4. Garnish with lime juice and cilantro.
