Chickpea smash

  • 250 g Cooked Chickpeas
  • 25 g Shallot, minced
  • 50 g Celery, minced
  • Vinaigrette
    • 30 g Olive Oil
    • 10 g Dijon Mustard
    • 10 g Red Wine Vinegar
    • 2 t Dried Dill Leaves
    • 1/4 t Medium-Grain Salt
    • 1/2 t Sweet Paprika
    • 1/4 t Black Peppercorn, ground
  • White Sandwich Bread, toasted
  1. Make vinaigrette. Combine dressing ingredients in a sealable jar. Shake vigorously to emulsify.
  2. Parboil vegetables. Boil water, and put shallots and celery in a colander. Pour boiling water over the vegetables through the colander to cook.
  3. Mix chickpeas, vegetables, and vinaigrette.
  4. Arrange sandwich with toasted sandwich bread and serve.
