Chickpea smash
- 250 g Cooked Chickpeas
- 25 g Shallot, minced
- 50 g Celery, minced
- Vinaigrette
- 30 g Olive Oil
- 10 g Dijon Mustard
- 10 g Red Wine Vinegar
- 2 t Dried Dill Leaves
- 1/4 t Medium-Grain Salt
- 1/2 t Sweet Paprika
- 1/4 t Black Peppercorn, ground
- White Sandwich Bread, toasted
- Make vinaigrette. Combine dressing ingredients in a sealable jar. Shake vigorously to emulsify.
- Parboil vegetables. Boil water, and put shallots and celery in a colander. Pour boiling water over the vegetables through the colander to cook.
- Mix chickpeas, vegetables, and vinaigrette.
- Arrange sandwich with toasted sandwich bread and serve.
