Wheat berries

  • 400 g Water
  • 100 g Wheat Berries
  • 1/4 t Medium-Grain Salt
  • 1 t Butter

Yields 300 g cooked wheat berries.

  1. Rinse wheat berries several times until water runs mostly clear.
  2. Soak (optional) at least 12 hours.
  3. Toast (optional) in oven at 190ºC (375ºF) for 10 minutes until fragrant.
  4. Cook. Add all ingredients to saucepan. Bring to boil, cover, reduce to low heat, and simmer 45-60 minutes (35 minutes if pre-soaked) until chewy. Remove from heat and drain any excess water.
  5. Fluff wheat berries with a fork.

Keep the grains covered by adding boiling water as necessary.
