Pecan pie
- 375 g Dark Corn Syrup or Honey
- 170 g Brown Sugar
- 55 g Unsalted Butter
- 4 Large Eggs, room temperature
- 250 g Raw Pecans, roughly chopped
- 1 t Vanilla Extract
- 1/2 t Medium-Grain Salt
- 1 Pie Crust, blind baked
- Preheat oven to 180ºC (350ºF).
- Make sugar mixture. Bring corn syrup and brown sugar to boil, and remove from heat. Mix in butter. Cool 10 minutes so that it won't cook the eggs in the next step.
- Temper eggs. Beat eggs. Slowly beat sugar mixture to eggs.
- Fill pie. Mix pecans, vanilla, and salt into tempered egg mixture. Pour filling into pie crust.
- Bake 45 minutes at 180ºC.
- Cool to room temperature and serve.
