Lava cake

  • 85 g Semi-Sweet Chocolate, high-quality, chopped
  • 55 g Unsalted Butter
  • 15 g All-Purpose Flour
  • 30 g Confectioners' Sugar
  • 1/16 t Medium-Grain Salt
  • 1 Egg
  • 1 Egg Yolk
  • For Serving
    • Ice Cream
    • Berries
    • Chocolate Syrup

Yields 2 cakes.

  1. Preheat oven to 425°F (218°C).
  2. Grease two 6-ounce ramekins.
  3. Melt chocolate. Place chopped chocolate and butter in a double boiler and melt, stirring until smooth.
  4. Mix batter. Whisk in flour, confectioners' sugar, and salt. Whisk eggs and yolks separately. Combine all with chocolate mixture until no lumps remain. Spoon batter evenly into prepared ramekins.
  5. Bake 12-14 minutes until sides are solid and tops look soft.
  6. Serve. Cool 1 minute. Invert onto plates. Add toppings and serve immediately.
