Lava cake
- 85 g Semi-Sweet Chocolate, high-quality, chopped
- 55 g Unsalted Butter
- 15 g All-Purpose Flour
- 30 g Confectioners' Sugar
- 1/16 t Medium-Grain Salt
- 1 Egg
- 1 Egg Yolk
- For Serving
- Ice Cream
- Berries
- Chocolate Syrup
Yields 2 cakes.
- Preheat oven to 425°F (218°C).
- Grease two 6-ounce ramekins.
- Melt chocolate. Place chopped chocolate and butter in a double boiler and melt, stirring until smooth.
- Mix batter. Whisk in flour, confectioners' sugar, and salt. Whisk eggs and yolks separately. Combine all with chocolate mixture until no lumps remain. Spoon batter evenly into prepared ramekins.
- Bake 12-14 minutes until sides are solid and tops look soft.
- Serve. Cool 1 minute. Invert onto plates. Add toppings and serve immediately.
