Creamed chocolate cake
- 80 g Unsalted Butter, room temperature
- 120 g Brown Granulated Sugar
- 40 g White Granulated Sugar
- 1 Egg
- 1 Egg Yolk
- 180 g Buttermilk
- 1 t Vanilla Extract
- 40 g Cocoa Powder
- 120 g White Wheat Flour
- 1/4 t Baking Soda
- 1/2 t Baking Powder
- 1/2 t Medium-Grain Salt
- Buttercream Frosting (optional)
- Preheat oven to 175ºC (350ºF). Grease an 8-inch square cake pan.
- Combine wet mix. Cream butter and sugar. Add egg yolk, and vanilla, and whip until combined. Add buttermilk, and continue whipping until combined.
- Combine dry mix. Sift flour, cocoa, baking soda, baking powder, and salt, and whisk to combine.
- Mix batter. Stir dry mix into wet mix until just combined. Transfer batter to cake pan.
- Bake 25-35 minutes at 175ºC until set.
- Cool for 5 to 10 minutes.
- Spread with frosting, and serve.
The batter looks uneven; that's okay.
