Creamed chocolate cake

  • 80 g Unsalted Butter, room temperature
  • 120 g Brown Granulated Sugar
  • 40 g White Granulated Sugar
  • 1 Egg
  • 1 Egg Yolk
  • 180 g Buttermilk
  • 1 t Vanilla Extract
  • 40 g Cocoa Powder
  • 120 g White Wheat Flour
  • 1/4 t Baking Soda
  • 1/2 t Baking Powder
  • 1/2 t Medium-Grain Salt
  • Buttercream Frosting (optional)
  1. Preheat oven to 175ºC (350ºF). Grease an 8-inch square cake pan.
  2. Combine wet mix. Cream butter and sugar. Add egg yolk, and vanilla, and whip until combined. Add buttermilk, and continue whipping until combined.
  3. Combine dry mix. Sift flour, cocoa, baking soda, baking powder, and salt, and whisk to combine.
  4. Mix batter. Stir dry mix into wet mix until just combined. Transfer batter to cake pan.
  5. Bake 25-35 minutes at 175ºC until set.
  6. Cool for 5 to 10 minutes.
  7. Spread with frosting, and serve.

The batter looks uneven; that's okay.
