Crumpets

  • 235 g Lukewarm Water, 40ºC or 104ºF
  • 1 t Instant or Active Dry Yeast
  • 1 t Sugar
  • 180 g White Wheat Flour
  • 1/2 t Medium-Grain Salt
  • 1 t Baking Powder, sifted
  • Butter, for greasing
  • For Serving
    • Butter
    • Jam
  1. Activate yeast. Add yeast, sugar, water in mixing bowl. Mix. Rest 10 minutes until yeast activates.
  2. Mix. Combine activated yeast mixture with flour, salt, and baking powder. Whisk 1-2 minutes until a smooth batter forms.
  3. Proof 45 minutes in a warm spot.
  4. Preheat pan to 190ºC (375ºF) over medium heat. Grease loaf pan with butter.
  5. Grease heat-safe forms or cookie cutters.
  6. Cook 5 minutes in a preheated until bubbles begin to rise through the middle of the crumpet. Flip and continue cooking until crumpet is fully set.
  7. Cool crumpets to room temperature.
  8. Toast crumpets and serve with butter and jam.
