Croutons

  • Garlic Oil
    • 100 g Olive Oil
    • 4 Garlic Cloves, minced
  • 200 g Stale Baguette, cut into pieces
  • Seasonings
    • 50 g Parmigiano-Reggiano, grated
    • 1/2 t Italian Herbs
    • 1/2 t Paprika
    • 1/2 t Medium-Grain Salt
    • 1/2 t Black Peppercorns, ground
    • 1/4 t Dried Cayenne Pepper, ground
  • 25 g Parmigiano-Reggiano, grated (optional)
  1. Infuse garlic oil. Mix oil and garlic. Rest at least 1 hour at room temperature. Strain garlic.
  2. Preheat oven to 300ºF (149ºC).
  3. Season. Mix bread and garlic oil to coat evenly. Add seasonings. Mix evenly. Arrange on a sheetpan in a single layer.
  4. Bake 30 minutes at 300ºF, tossing halfway.
  5. Season again with remaining parmesan.
  6. Bake 10-20 minutes at 300ºF to desired texture.
