Croutons
- Garlic Oil
- 100 g Olive Oil
- 4 Garlic Cloves, minced
- 200 g Stale Baguette, cut into pieces
- Seasonings
- 50 g Parmigiano-Reggiano, grated
- 1/2 t Italian Herbs
- 1/2 t Paprika
- 1/2 t Medium-Grain Salt
- 1/2 t Black Peppercorns, ground
- 1/4 t Dried Cayenne Pepper, ground
- 25 g Parmigiano-Reggiano, grated (optional)
- Infuse garlic oil. Mix oil and garlic. Rest at least 1 hour at room temperature. Strain garlic.
- Preheat oven to 300ºF (149ºC).
- Season. Mix bread and garlic oil to coat evenly. Add seasonings. Mix evenly. Arrange on a sheetpan in a single layer.
- Bake 30 minutes at 300ºF, tossing halfway.
- Season again with remaining parmesan.
- Bake 10-20 minutes at 300ºF to desired texture.
